Pre-heat oven to 350 degrees F. Get your roasting pan with rack ready. Slice the apple, lemon and orange in half. Place the turkey or turkey breast on the rack. Place the fruit in the cavity of the turkey (or the underneath of the turkey breast).
Rub a good amount of EVOO over the skin with either gloved hands or a paper towel. Sprinkle the Herb de Provence with Lavender and cracked pepper over the turkey skin. Cover loosely with aluminum foil. Cook according to poundage cooking times. Take foil off at end to brown.
