1 Cup AP gluten free flour - King Arthur Measure for Measure is great
1 tsp baking powder
4 cups fresh fruit (peaches, apples, berries - mixed too)
1 tsp ground cinnamon
1 tsp vanilla
Up to 2 cups white sugar (I use 1 plus 1/4)
1 cup milk
1/2 cup butter
1 TBS lemon juice preferably fresh
1/8 tsp salt
Vanilla Ice Cream or Cool Whip, or both
Instructions
Preheat oven to 375F
Place the butter in a 13 x 9 baking dish.
Place in oven until the butter melts, about 5
minutes. Remove from oven and set aside.
In a large mixing bowl, combine the flour, 1
cup of sugar, baking powder, vanilla, and salt. Stir in
milk just until the dry ingredients are
moistened. Pour the batter over the butter in
the baking dish. Do NOT stir.
In a separate large mixing bowl, combine the
remaining 1/4 to 1 full cup of sugar with the peach slices,
optional cinnamon
and lemon juice. Mix well. Pour the fruit
mixture over the batter in the baking dish. Do
NOT stir. If desired, sprinkle with cinnamon.
Bake a minimum of 50 minutes or until the cobbler is
golden brown. Gluten Free tends to need a little more time and is
best when very gold.
Serve warm or at room temperature.
