Place boiling water and cashews in blender and process until
smooth. Add remaining ingredients and blend again until
smooth.
Pour into saucepan and cook over medium heat until mixture
thickens, stiffing constantly with a whisk.
Pour into a bowl, cover with plastic wrap directly on yogurt,
and refrigerate overnight.
Stir before serving then spoon into individual bowls and
garnish as desired.
Parfaits- Layer granola and yogurt into cups, garnish with
whipped topping, and a fresh strawberry.
