1 med sweet potato, cut 1/2 inch pieces (1 1/2 cups)
1 tsp pumpkin pie spice
1/2 tsp thyme
1/4 tsp cayenne
Cooked brown rice
1/2 cup frozen mango, chopped
2 Tablespoons sliced green onion
2 Tablespoons fresh cilantro, chopped
1 finely chopped habanero chile
Instructions
Water sauté onion, pepper and garlic 3-4 mins. Add next six ingredients. Bring to boil.
Reduce heat, cover and simmer 25 minutes until sweet potato is tender.
Meanwhile make relish. Mix together mango, green onion, cilantro, and habanero.
Season soup with salt and pepper. Serve over brown rice with mango relish.
