Lay nori horizontally on a piece of parchment paper shinny
side up. Spread sushi rice over nori just to cover, wet fingers
so it won’t stick. (I enjoyed half brown and half white sushi
rice).
Fold parchment over nori sheet and flip so that rice is now on
the bottom and rough side of nori is facing upward. With nori
still laying horizontally on parchment, lay sweet potato, mango,
avocado, and cucumber along edge nearest you.
Roll up tightly. Let parchment tuck inside roll, just untuck it
once in a while. Cut roll in 8 equal pieces and arrange on a
plate. Top with sesame seeds or sriracha mayo as desired.
To make sriracha mayo stir together mayo, sriracha and lime
juice. Enjoy!
