Peel and cut potatoes in half. Place in medium
size sauce pan and cover with cold water. Salt
water. Turn heat on to medium high heat and cook
until fork tender, about 25 min. Drain potatoes
and move to mixing bowl.
While potatoes are boiling, in the big mixing
bowl, add the salt, sour cream, butter, cheese,
cumin and garlic powder. After adding potatoes,
mash well. Add additional seasoning to taste.
Wrap tortillas in a towel and place in
microwave to warm. Add about 1 to 2 tb of
potato mixture in each tortillas. Do not
overfill. Press sides of tortillas squeezing a
little of the potato mixture in the middle to
the edge to use as binding glue. Set aside.
Heat about half to 1 cup of oil in large
skillet over medium high heat. When oil is
hot, place folded tacos in pan. Cook for about
1.5 minutes are until golden brown and crispy.
Lay finished tacos on paper towel lined plate.
Add tacos to a plate. Top with lettuce and
condiments of your choice.
