2 chicken cutlets
|
|
1/2 Cup flour, seasoned with kosher salt and pepper
|
|
2 eggs, beaten
|
|
1 ounce olive oil
|
|
2 ounces butter
|
|
2 ounces white wine, like Chablis
|
|
1/2 fresh lemon, juiced
|
|
1 Tbl. fresh parsley, chopped
|

|
|
|
|
|
|
|
|
|

|
|

Instructions |
|
|
Heat olive oil in a saute' pan on medium high. Drench chicken in egg
wash and coat in seasoned flour. Shake off excess.
|
|
|
Saute' chicken about 3 - 5 minutes per side, or until the chicken's
internal temperature reaches 165 deg. Outside should be golden
brown.
|
|
|
Add the wine, butter and lemon. Cook until the liquid reduced and
thickens. Add the parsley. Pour remaining liquid over the chicken
when plated.
