Preheat oven to 400 degrees. Heat 2 tbsp olive oil
in iron skillet on medium heat. Add vegetables and
cook until tender, approximately 4-6 minutes. Add
cooked breakfast meat and cook for one minute.
Spread the vegetable/meat mixture into a single
layer and flatten with a spatula.
Sprinkle the cheese on top and let it start to melt.
Mix egg and heavy cream together and pour of the
vegetable/meat mixture. Tilt the pan to make sure
the egg mixture settles evenly.
Cook for 2-3 minutes, until you see the egg at the
edges of the pan start to set. Bake in a 400
degree oven for 8-10 minutes. Eggs should be set.
Cut a small slit in the center, if raw egg runs
in, bake for a couple more minutes. Cool for 5
minutes and serve.
