Heat oil in large pan on high. Add chicken to pan and season with salt
and pepper, brown stirring constantly, about 5 minutes. Remove from
pan. Add the onion and garlic to the pan and cook until soft. Add the
vinegar and cook on high one minute. Reduce heat to med-low, add
oregano and bay leaf and simmer 15 minutes, adding a few
tablespoons of warm water if pan becomes to dry. Return chicken to
pan, fold in olives cover and cookm15 min.
