Bring 4 cups water to a boil; add the grits and
salt. Cook for 5-7 minutes or until tender. remove
from heat, stir in butter, cream cheese and cheddar
cheese.
In large skillet heat 1 Tbsp vegetable oil over
medium heat. Add the shrimp and sprinkle with the
Cajun seasoning and cayenne pepper. Flip shrimp
after one minute; and cook for an additional minute.
Remove to a plate.
Add 1 Tbsp vegetable oil to the skillet and add red
pepper, onion and garlic and cook until slightly
tender, reduce heat to medium low. Add in the 1/4
cup broth or water. Add the shrimp back in and cook
for an additional minute.
Serve grits with shrimp mixture spooned over top.
Top off with fresh chopped green onions.
