1/4 C sweet pickle relish or juice from sweet heat jalapenos
4 tbl dijon mustard
1 tbl chopped adobe pepper from can
1 tsp plus 2 tbl fresh lemon juice
4 cans (10oz) tuna in water, drained
3 1/2 C plain bread crumbs
2C cheddar cheese
1 tbl parsley
2 tsp old bay seasoning
1 tsp hot sauce
3/4 C unsalted butter at room temp
6 ciabatta rolls, split
12 slices tomato
6 lettuce leaves
Instructions
make remoulade. In bowl mix 1 cup mayo or miracle
whip, relish or juice, 2 tbl mustard, adobe pepper,
1 tsp lemon juice, and worcestershire. Cover and
chill.
Tuna cakes... Mix Tuna, 1/2 C breadcrumbs, cheddar,
parsley, old bay, 1 tsp cayenne pepper, hot sauce,
remaining mayo, mustard and lemon juice. Form 6
balls and transfer to plate and chill. You can also
freeze and defrost when needed
Spread remaining bread crumbs in dish. Flatten
tuna balls into patties , coat in breadcrumbs In
nonstick pan heat 1/2 C butter. Add patties and
cook flipping once until golden about 5 minutes
per side. Spread remaining butter on rolls and
broil until golden. Spread remoulade on cut sides
of rolls. Add Tuna cakes, tomato, and lettuce.
