(1) Preheat oven to 425 degrees Fahrenheit; (2)
Spray a 10-inch cast iron skillet with oil & place
in oven while it heats (3) Mix cornmeal, sugar &
salt in a bowl, set aside; (4) Heat milk in
microwave until very hot (1-2 minutes) & pour over
cornmeal mixture, allowing to cool slightly; (5)
Add remaining ingredients & mix well; (6) Pour
into hot skillet & bake for 17-22 minutes. With a
hot skillet, it will bake quickly; (7) Serve warm
with butter & honey, if desired.
