In a large covered pot such as a dutch oven heat olive oil to medium
high heat.
Add Onion, Celery, Carrot and cook until softened.
Add diced Chicken and Italian Seasoning to the pot, stir and sauté
until cooked through.
Stir in chicken stock, add potatoes, peas, parsley and bring to a boil.
Add un-cooked pasta and cook uncovered over medium-high heat
until pasta is done stirring occasionally. Turn off heat, cover and let
sit for 15 minutes to soak in the good flavor.
