Season both sides of roast with salt and pepper. Let sit at room temp
30 - 60 minutes. Set Instant pot on Sear, add 1 Tbs olive oil and sear
both sides of roast about 4 min each side. Set roast aside.
Add onion and sauce until caramelized adding a spot of broth to
deglaze bottom of pot. Turn off Instant Pot.

Add in beef broth, vegetables, garlic, thyme and a bit of salt and
pepper. Add in roast place lid on pot with VENT OPEN. Select SLOW
COOK on the highest setting for 4 - 5 hours.

When done remove food out of pot then take a bowl with a strainer
and strain out debris from beef broth. In the instant pot, on saute'
with less heat add in butter to broth. Once butter is melted add in
flour and cook 2-3 minutes until desired thickness is achieved. Add
in more flour for thicker and more broth for thinner gravy.
