Heat EVOO in large skillet on med-high heat. When
warm, add Brussel sprouts (they should sizzle a
bit). Add some salt and pepper. Toss with tongs
regularly until edges are golden brown - 3-5
minutes.
Add water and cover for 5 minutes. Stir once or
twice and make sure the water isn't completely
evaporated. Add more water if needed.
Remove cover and turn heat to medium. Add onions,
garlic, butter, salt, pepper (and bacon if desired).
Stir with tongs until butter is melted and onion is
cooked. Sautee for about 5 minutes.
Let simmer on low if needed for preferred
softness of Brussies (3-5 minutes).
