Clean chicken breast of all fat and skin. Tenderize chicken breast with meat tenderizer until proper thickness has been achieved. Coat chicken breast with breading using the standard breading procedure
Preheat sauté pan over heat and melt clarified butter. Lightly sauté chicken breast over medium heat until each side is golden brown. Remove chicken breast from pan and melt the unsalted butter into the pan. Remove the zest from the lemon and reserve for garnish
Take one half lemon and squeeze with cut side up, to ensure seeds do not get in sauce to deglaze the pan. Place a fork in the top part of the lemon and use to stir sauce in the pan to incorporate the butter and lemon juice together.
Once sauce has been incorporated, serve the chicken breast on a preheated plate. Lightly nappe the sauce over the chicken breast and garnish with a lemon zest
