Preheat oven to 375F. Place chicken breast between sheets of waxed paper. Pound with mallet until chicken is ¼ inch thick.

Dredge chicken breast with flour. Dip in egg and then coat with breadcrumbs. Heat oil in sauté pan. Cook chicken breast until golden brown in color. Turn and brown on other side. Check to see that the juices run clear when the breast is cut open.

Remove chicken, drain on paper toweling. Spray nonstick pan with baking spray. Place chicken on pan. Place tomato sauce on top of breast. Layer with slice of mozzarella cheese.

Bake in oven until cheese melts. Garnish with chopped fresh parsley. Serve with a side of your favorite pasta and tossed salad.
