Mix whatever quantity of fruit you like, or have left from other batches, until
you have about 4 cups of crushed fruit mix. I used a mix of blue-berry, Plum,
1/2 banana, and red berries (juice only). Except for the banana they were all
left-overs.
Put fruit-mix, lemon juice, and certo with 1/2 cup of the sugar into a large pan.
Mix well. The 1/2 cup of sugar mixed in ensures that the certo is absorbed well.
Let stand 20 minutes.
Simmer for 15 minutes (depending on the fruit used) or until the fruit is tender.
Put on high and bring to a boil, keep stirring. Add the remainder 3-1/2 cups sugar
while stirring contineously. Bring back to a hard boil where you are unable to
stirr it down. Boil on high for 3 minutes. Turn heat off and keep stirring
another couple minutes until the mix is cooled down a bit.
Can into bernadin jars as usual.
