Salsa
-The salsa is fairly simple. Add about 1/3 of the chopped tomatoes, the chopped cucumber, the chopped onion, coriander and 3 tbs of the olive oil into a small bowl and mix well. Tada! Salsa is done.

Pancakes
-Add the flour, baking powder and a pinch of salt and pepper to a large bowl and mix together. Stir in the rest of the tomatoes, a small amount of coriander and the parmesan.
-In a seperate bowl, combine 2 tbs of olive oil, egg and milk. Whisk until smooth.
-Add everything together and stir into a batter.
