10 lasagna noodles
|
|
2 cups sliced mushrooms
|
|
1 cup grated carrot
|
|
1 lb spinach
|
|
1/2 cup chopped onion
|
|
1 tbsp oil
|
|
15 oz can tomato sauce
|
|
6 oz can tomato paste
|
|
1/2 cup chopped olives
|
|
|
|
1 1/2 tsp oregano
|
|
2 cups cottage cheese
|
|
12 oz monterey jack sliced
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Cook noodles. Drain & let cool.
Rinse spinach, drain & steam 3-5 minutes.
|
|
|
In saucepan, cook mushrooms, onions & carrots in hot oil until tender.
Stir in tomato paste, tomato sauce, olives and oregano.

|
In a greased 13x9, layer 1/2 of noodles, cottage cheese, spinach, MJ cheese & sauce.
Repeat layers reserving MJ slices for the top.
|
|
|
Bake for 30 minutes at 375 degrees.
