5 cups apples, unpeeled, cored and diced
2 cups sugar
1 cup oil
1 tsp vanilla
2 eggs
3 cups sifted flour
2 tsp baking soda
½ tsp salt
1 cup coconut
1 cup chopped nuts
Combine apples and sugar. Set aside for 30 min. Stir together oil, eggs, and vanilla and add to apple mixture. Blend in remaining ingredients and bake in prepared Bundt pan at 350 degrees for 55 minutes. (A 9x13 inch pan may be used by reduced baking time to 45 min.) Cool 10 – 15 min before removing cake from pan. Drizzle topping over cake.
Topping:
½ cup evaporated milk
4 Tbsp brown sugar
2 Tbsp butter
2/3 c coconut
Chopped nuts
Boil milk, sugar, and butter until mixture thickens slightly. Add coconut and drizzle topping over cake. Sprinkle nuts on top.
