Frozen puff pastry dough sheet (in freezer section of supermarket, usually near frozen desserts or
supermarket, usually near frozen desserts or Cool Whip)
One round of brie cheese
One jar of pre-made basil pesto
Grated parmesan cheese
2 tablespoons fresh or 2 teaspoons dried basil leaves
Instructions
Allow dough to thaw for a couple of hours. Pre-set oven to 400. Grease cookie sheet. Mix 3 tablespoons parmesan cheese with the basil.
Cut brie round horizontally in two. Spread basil pesto over the bottom layer, sprinkle parmesan cheese mixture over the top of the pesto layer. Reassemble cheese round.
Roll pastry dough into rectangle, about 15X9 inches, on a lightly floured surface cut rolled dough into two circles, one about 8 or 9 inches and the other about 6 inches. Cut small shapes out of remaining dough (to be placed atop brie). Place assembled cheese round on center of large circle bring pastry up and over the cheese round, pressing to make smooth.
Brush top edge of pastry lightly with water or egg. Place 6 inch circle on top pressing gently around top to seal. Brush with water or egg again and place dough shapes (ie leaves, flowers, hearts, stars, letters, criss-crosses, whatever) on top. Bake about 25 minutes, cool for 30 minutes before serving
