preheat oven 350. place ricotta cheese, tofu and italian seasoning in food processor and blend on high. heat oil, saute onions and mushrooms. Add sauce, bring to a boil. Layer lasagna in 9x12 pan: sauce, noodles, ricotta filling (repeat) ending with sauce on top. sprinkle with mozzarella cheese & parmesean cheese. cover and bake for 1 hr.
