Heat oven to 400, rinse chicken inside and out and pat dry with paper towels.
Rub chicken with 1 Tbs of oil and season with 1.5 tsp of salt and .25 tsp of pepper. Place in roasting pan or baking dish.
In small bowl, combine peaches, shallots, vinegar, thyme and remaining oil,salt and pepper. Scatter the peach mix around the chicken.
Roast until chicken is cooked through and a thigh registers 180F on a meat thermometer, about 70 minutes. Let rest 10 minutes before carving. Serve with peaches and pan sauce
