1 1/4 lbs Chicken Breast, cut into bite-sized pieces
11 Oz Chunky Salsa
1/2 tsp Dried Oregano
2 Cups Chicken Broth
2 15 oz Can White or Yellow Hominy, rinsed and drained
Sour Cream (optional)
Fresh Cilantro (optional)
Fresh Limes (optional)
Instructions
In a large skillet or wok, cook garlic and onion in oil until onion is lightly browned. Cut chicken into bite size pieces and add to the onion, along with the salsa, oregano, and chicken broth. Bring to a boil and reduce heat. Simmer until chicken is done. Add hominy and heat to simmering.
Top each bowl of soup with a dollop of sour cream, a sprinkle of fresh cilantro, and a squeese of lime. Serve and Enjoy.
