Prepare 1 Baked Pie Shell.
Mix together in Large Sauce Pan:
Sugar, Cornstarch and Salt.
Gradually Blend in:
Cold Water and Lemon Juice.
When smooth, add Well-Beaten Egg Yolks and Butter.
Stirring Constantly, Slowly add Boiling Water.
Bring to gentle boil over Medium Heat, stirring constantly.
When it comes to a boil, reduce heat to low , and stir for 1 minute.
Remove from Heat and add Lemon Peel.
Pour into Baked Pie Shell.
Preheat Oven to 325 degrees.
Whip Egg Whites till Frothy.
Add Cream of Tarter.
Whip till stiff & peaks still bend over at tip.
Adding 1 Tablesoon at a time, Beat in Sugar, then Vanilla.
Spread on Pie and bake 10 to 15 minutes, till slightly browned. Chill till served.
