Place chicken breasts between two sheets of waxed paper and pound out to 1/4 inch thick. Season with Salt and Pepper.

In a small bowl combine goat cheese, apple and rind. Divide mixture evenly on each breast. Fold over edges to make a pocket.

Sprinkle flour onto a sheet of waxed paper. In a shallow bowl combine egg and 1 Tablespoon water. In another shallow bowl combine bread crumbs and parmesan cheese. Dust each breast with flour then dip into egg mixture and then into bread crumb mixture.

In a large skillet heat butter and oil over meduim heat. Add chicken and cook until browned and cooked through, about 7-10 minutes on each side. Drain on papertowels, and serve.
