Cut tops off peppers; remove seeds. Combine Bisquick, Cheddar cheese and sausage; mixture will be hard to mix. Do not add water; you will have to knead it by hand. Flatten a small amount of mixture. Stuff the peppers with Monterrey Jack or mozzarella cheese; wrap mixture around pepper. Spray cookie sheet with non stick spray; place pepper "eggs" 2" apart on cookie sheets. Bake at 325 degrees for 25 to 30 minutes. Drain on paper towels.
