Shake everything in a jar with a tight fitting lid.
variations: creamy vinaigrette add 1 egg yolk
curry vinaigrette: add 1/4 to 1/2 tsp. curry (or to taste) to creamy recipe.
herb vinaigrette: to basic or creamy recipe, add chopped chives or herbes de provence
any version may be used in red-skinned potato salad in place of mayonnaise, before serving, add sliced scallions, chopped hard boiled egg, haved cherry tomatoes, etc
all dressing can be refrigerated at least 1 week. *remove garlic after 2 days tops-they get bitter.
