Boil the potatoes in a large pot of lightly salted water over high heat for 25 minutes, until they are fork tender. Once cooked cut them into halves or quarters and prick them several times with a needle or fork.
In a blender, combine oil, garlic, lemon zest, thyme or sage and half of basil and parsley, until there is a herbed oil.
Toss the potatoes and herbed oil in a large mixing bowl; let them cool for a few minutes before adding the remaining herbs. Add lemon juice and salt to taste.
