1 Small Butternut Squash, peeled, seeded and cut into 1" pieces
2 Medium Parsnips, peeled and cut into 1" pieces
1 Large Sweet Red pepper, cored, seeded and cut into 1/4 " strips
1 Medium Red Onion, cut into 1" wedges
2 Tablespoons Olive Oil
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
1-18 Ounce Tube heat and serve prepared Polenta
1/4 Cup Half & Half
1/2 Cup Shredded Asiago Cheese
8 Sprigs Fresh Thyme
Instructions
Heat Oven to 375 degrees.
Toss veggies with olive oil, pepper and salt. Place in roasting pan and roast for 45 minutes stirring twice.
Spray a 9x13 pan slice Polenta into 12 slices about 1/2 inch thick and pal in pan. Spoon veggies over Polenta sndsprinkle with cheese, scatter thyme over the top.
Bake 375 degrees for 20 minutes, cool slightely before serving.
