(or caraway seeds, or cumin, 1 1/2 teaspoons for 4 large potatoes)
4 Tablespoons grated Cheddar cheese
1 1/2 Tablespoons Parmesan cheese
Instructions
Peel potatoes if the skins are tough, otherwise just scrub and rinse. Cut potatoes into thin slices, but not all the way through. Put potatoes in baking dish; fan slightly.
Sprinkle with salt; drizzle with butter. Sprinkle with herbs.
Bake at 425 degrees for 50 minutes. Remove from oven; sprinkle with cheeses. Bake another 10 to 15 minutes or until lightly browned, cheeses melt and potatoes are soft inside when checked with fork.
