1 - 6 ounce box "Uncle Ben's" long grain and wild rice
2 cups water
1/2 can cream of chicken soup
2 or 3 ounces sliced mushrooms
Instructions
Spray a 9 x 13 inch casserole dish; preheat oven to 325 to 350 degrees. Melt 4 Tablespoons margarine in casserole dish. Place chicken breast in dish; turn over int he margarine. Sprinkle very lightly with salt and pepper (other ingredients have salt); on top of chicken, sprinkle bell peppers, onions and celery. Cover dish with foil; bake 35 to 45 minutes.
While chicken is baking, cook the rice; cook as directed on box, except use only 2 cups water and cook for only 15 minutes. (Do not use any salt and omit the margarine.) When the rice has cooked for 15 minutes, add 1/2 can cream of chicken soup and mushrooms; stir together.
Spread over the chicken; cover and bake for another 10 to 15 minutes.
