Combine chicken with salt and water in a large saucepan; simmer for 45 minutes, or until tender; drain. Remove skin and bones; chop. Combine soups, mushrooms, tomatoes and Velveeta cheese in a double boiler; cook until well blended, stirring frequently.
Saute celery, peppers and onions until tender. Combine all ingredients except Cheddar cheese in a large bowl; mix well.
Spread in 13 x 9 inch pan. Cook 1 large package spaghetti; add to mixture with chicken. bake at 350 degrees for 25 minutes. Top with Cheddar cheese; bake 10 minutes longer.
