     Duchess Potatoes

Ingredients
3 cups hot mashed potatoes
Butter
6 Tablespoons milk
1 1/2 teaspoons salt
1/8 teaspoon pepper
3 eggs, separated
 

Instructions
Combine potatoes, 3 Tablespoons butter, milk, salt and pepper and egg yolks; mix well. Fold in stiffly beaten egg whites. Place mixture in pastry bag with tube. Form rosettes on greased baking sheet or shape border around meat or fish. Brush with butter. bake in preheated 425 degrees oven for 5 minutes or until brown.
