3 tomatoes, seeded and coarsely chopped
|

1 cucumber, peeled, seeded, diced
|
|
1/4 cup chopped red onion
|

1/4 cup chopped fresh cilantro
|

2 T. chopped drained pimento
|
|
1 c. mixed veggie juice
|
|
1/4 c. reduced sodium chicken broth
|
|
2 T. balsamic vinegar
|
|
1 T. evoo
|
|
|

1/2 t. hot pepper sauce
|
|
1/2 t. salt
|
|

Instructions |
|
|
Puree the tomatoes in a food processor or blender. Add the cucumber, onion, cilantro, and pimento; pulse until pureed.
|

Add the veggie juice, broth, vinegar, oil, pepper sauce, and salt; process to blend. Cover and chill at least an hour before serving.
