1 cup grated, peeled, and seeded cucumber, squeezed dry
1 garlic clove, minced
2 t evoo
4 6.5 inch pita bread rounds
2 c shredded lettuce
3/4 pound deli-sliced lean roast beef
1 tomato, seeded and chopped
1/2 c. thinly sliced red onion
Instructions
Combine the yogurt, cucumber, garlic, and oil in a small bowl.
Lay the pita rounds flat (do not split open). Divide the lettuce and the beef among the rounds. Top each with 1/4 cup of the tomato and 2 t. of hte onion. Drizzle with the sauce.
