After removing the chicken breasts from your oven-proof pan, you can make the most amazing sauce with the drippings. Just put 1-2 tablespoons of flour with 1-2 tablespoons butter in a small bowl and smoosh them together with your fingers to make a paste (there's a French name for this method of thickening a sauce but forgot). Throw your paste into the pan drippings on medium heat, stir it around until its a little light brown then add either chicken broth or cream (depending on your diet). Taste to see if you need to add more salt and pepper. Pour over pinwheels.
