1 - 3 pound boneless pork loin (split in two halves)
salt and pepper to taste
8 slices of bacon
1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup red wine
1/2 red onion ( chopped )
1 tbsp dried rosemary
1/4 cup craisins
Instructions
Preheat oven to 375. Salt and pepper porkloin and wrap with bacon (use toothpicks to hold in place) Cook over medium heat until golden brown turning roast to brown all sides about 10 minute.
Mix honey, vinegar, red wine, onion and rosemary in small bowl. Pour over pork loins and roast in over for 15 minute, then sprinkle with craisins and bake another 15 minutes. Remove toothpicks and rest the roasts for at least 5 minutes and slice.
