Preheat a large non stick saute pan over medium heat
|

Add chicken chunks, half the garlic and half the pepper (onion also if using) Turn as chicken gets white on the bottom. If chicken sticks, use a small amount of water to loosen.

Add the wine, the rest of the garlic and other remaining seasonings. Cook for two minutes and add mushrooms.

|
Continue cooking until the biggest chunks of chicken are cooked through out. Note- I like to simmer it with a cover over a lower heat so the steam and juices really get infused into the chicken! So this recipe can be pretty fast or you can go slower for even more flavor.
A great side with this would be a simple green salad or take only your chicken out of the pan and saute some fresh zucchinini and yellow squash together in the sauce……yum flavor!!
