heat small pan and coat with butter. Add garlic
and shallots until light golden brown. Add mushroom and cook for 3
minutes. Scramble the raw
eggs in a bowl and pour over mushrooms. Sprinkle
with salt and pepper for taste. Stir egg and
mushroom until completely cooked.
Toast one bagel (light), when toasted, pour
scrambled egg/mushroom on top.
