3 tablespoons butter or margarine

3 to 4 yellow summer squash, sliced
|

1 medium onion, chopped
|
|
1 can (4 ounces) chopped green chilies
|

8-10 saltine crackers, crushed

Salt and pepper to taste

1-1/2 cups (6 ounces) shredded cheddar cheese
|

Instructions |
|
|
In a skillet, melt butter over medium-high heat. Saute squash and onion until crisp-tender.
|
|
|
Remove from heat; stir in chilies, crackers, salt and pepper.
|
|
|
Spoon into a greased 1-1/2-qt. casserole dish. Top with cheese.
|
|
|
Bake at 350 degrees for 15-20 minutes.
