Place a roasting rack in a pan and place pork on it. To avoid a mess, line the pan with foil before placing the rack on it. Preheat the oven to 450 F, with the oven rack in the middle.
Rub the salt into the pork. Mince the garlic and spread over the salted pork.
Mix the honey and mustard and spread the mixture over the pork.
Roast the pork for 20 to 25 minutes (18 to 20 minutes per pound), about an hour. Cool the pork for 10 minutes before slicing.
