Bring water to boil and boil potatoes 7-8 minutes with lid on until fork tender.
Preheat oven to 375
Spray 13 by 9 baking dish with Pam

Cut cooked potatoes in slices 1 inch thick. Place cut side up in pan.
Mix in bowl: light brown sugar, cinnamon, salt, melted butter,and lemon juice.

In another bowl: mix cornstarch and bourbon.
Mix sugar mixture and cornstarch mixture together.
Pour over sweet potatoes.

|
Bake 375 covered with foil for 50 minutes. Remove from oven, turn potatoes over and bake uncovered for 10-15 minutes.
To do ahead: bake, cool and put in refrig covered. Reheat at 350 for 20-30 minutes covered.
can be frozen.
