4 skinless boneless chicken breasts cut into strips
2 cloves garlic minced
2 tsp olive oil
1 lime juiced
Mole-
1/2 cup chopped onion
2 cloves garlic minced
1 Tbsp olive oil
11-12oz tomatillos, rinsed and drained
1/3 cup raw shelled pumpkin seeds toasted
1 4oz can of diced green chile peppers
1/4 cup chicken broth
3 Tbsp fresh cilantro
1/4 tsp salt
Instructions
In a skillet, cook onion and garlic in hot oil for 5 minutes. In food processor, combine onion mixture, tomatillos, 1/3 cup of pumpkin seeds, chilies, broth, cilantro and salt. Transfer to skillet and heat through. Spoon over chicken
