1 T. canola oil
|
|
1 med onion, chopped
|
|
1 med yam, peeled and diced (1/2 to 3/4 in pcs)

2 cloves garlic, minced
|
|
1 small zucchini, diced
|
|
48 oz. lowfat veg broth (can use chicken broth)
|

1/4 t. thyme
|
|
1/2 t. cumin
|
|
3/4 c. white rice, uncooked
|
|
|
|
16 oz. chunky salsa
|
|
2 cans chick peas, drained and rinsed
|
|
1/3 c. creamy peanut butter
|
|
|
|

|
|
|
|
|
|

Instructions |
|
|
In large saucepan heat oil over med heat and saute onion, yam, garlic and zucchini until onion is soft.
|

Add broth, thyme, cumin and rice. Bring to boil and simmer covered for 15 min.
|
|
|
Add salsa and chick peas, bring to boil.
|
|
|
Add peanut butter and stir until completely dissolved. Serve hot.
