3/4 lbs boneless, skinless chicken breast, cut into one inch cubes
1 tbsp. olive oil
1 can chopped tomatoes in juice
2 plum tomatoes, chopped
2 cloves garlic, sliced or minced
1/3 c. kalamata olives, sliced
1/2 red onion, sliced thin
1 c. white wine
1/4 c. cream
2 tbsp. fresh basil, chopped
sea salt and garlic salt to taste
8 oz. whole wheat pasta, cooked in boiling salted water
Parmesan cheese (optional)
Instructions
Season chicken with garlic salt, sea salt and pepper. Brown in saute
pan with olive oil.
When browned, remove chicken and set aside. Add tomatoes,
garlic, olives and onion to pan and bring to simmer. Cook for
about 5-10 minuts or until onion is soft and translucent.
Add white wine and simmer for another 5 minutes before adding
chicken back in.
Add basil and cream then toss with hot, cooked pasta. Garnish
with parmesan cheese.
