Submerge chipotle pepper in 1/2 Cup Boiling water and set aside 10-15 minutes to soften. Remove from water, discard the stem and finely chop.
In a medium bowl combune chipotle, honey, chile paste, ketchup, lime juice, pepper and salt. Stir well. Reserve half the sauce to serve with the ribs.
Coat grill rack with spray and heat to medium. Grill ribs for 25-30 minutes, turning every 10 minutes. Brush ribs with sauce and grill 5 minutes, turn and brush cook an additional 5 minutes and repeat, until sauce is used up and ribs are cooked, abotu 30 minutes
Serve with additional heated sauce.
