1-1/2 lbs. boneless, skinless chicken breasts, cut up

1 T. Olive oil
|

1-2 tsp. chili powder
|

1 jar Spaghetti Sauce (make sure gluten-free) or 2 cans of diced tomatos
|
|
1 can mexican style corn, drained
|
|
1 T. chopped fresh cilantro or parsley (optional)

Instructions |

|
Season chicken, if desired, with salt and pepper.

In 12-inch nonstick skillet, heat 1 T. Olive oil over medium-high heat and brown chicken with chili powder, stirring occasionally.

Stir in spaghetti sauce and corn. Cook 3 minutes or until chicken is thoroughtly cooked and sauce is heated through.

|
