6 slices Applewood smoked bacon cooked and crumbled
2 eggs
1/2 c heavy cream
1/4 c chopped Italian parsley for garnish
pinch of salt & pepper
Instructions
Bake frozen tart shell according to directions on package and allow to cool. Meanwhile, in a large skillet, melt butter over med-low heat; cook leek, stirring occasionally, for about 30min or until softened. Let cool.
Brush the cooled pastry shell with mustard; spread leeks over the top. Sprinkle with bacon. Whisk together the eggs, heavy cream, salt and pepper; pour over bacon.
Bake at 350 for 30-35min or until golden brown. Cool 5 min. Garnish with parsley and serve.
